Product Description

1. Product Characteristics

Normal Light Color·Half-Kernel is a specialty grade in walnut kernel classification. Normal Light Color is a colour grade that sits between Jianbai and Pubai – the kernels have a light yellow base colour that is uniform and natural, neither as light and bright as Jianbai nor as deep as Pubai.

The slightly deeper colour of Normal Light Color, with its natural walnut tone, offers better colour stability after baking, making it more suitable for high-temperature baking applications. The kernels are plump and complete, with a crisp texture and pronounced nutty flavour that retains the natural characteristics of walnuts.

3. Uses

With its stable colour and complete form, Normal Light Color·Half-Kernel is suited for applications where colour consistency and high-temperature processing capability are important.

High-Temperature Baking: The colour sits between Jianbai and Pubai, with minimal colour change after baking. It blends well with a variety of baked product bases. Suitable for cookies, walnut crisps, and shortbread – products that require high-temperature baking – where the kernels retain a natural colour that does not stand out.

Traditional Chinese Pastries: Suitable for mooncakes, walnut cookies, and wife cakes. The half-kernel form remains visible in cross-section, serving both as a flavour ingredient and as structural support for the filling.

Chocolate and Coated Products: Used in chocolate bars, coated nut bars, and energy balls. The Normal Light Color colour provides moderate contrast with dark or milk chocolate bases, offering visual harmony.

Breakfast Cereals and Snack Bars: Used in oat bars, nut energy bars, and cereal mixes. The half-kernel form is easily identifiable in mixtures and provides a crisp texture.

4. Usage Scenarios

Normal Light Color·Half-Kernel is suitable for commercial scenarios where colour stability and high-temperature processing adaptability are required.

Central Baking Factories: Bulk purchased for standardised baked goods such as cookies, walnut crisps, and shortbread. Stable colour grade ensures minimal batch-to-batch colour variation after baking, meeting the consistency requirements of industrial production.

Traditional Pastry Workshops: Used for fillings and decoration in mooncakes, walnut cookies, and other traditional pastries. The half-kernel form remains visible in cross-section, suitable for both handcrafted and machine production.

Chocolate Processing Companies: Used in chocolate bars and coated nut products. The Normal Light Color colour coordinates well with chocolate, with good oil stability during processing.

Retail and Household Consumption: Can be packaged as ready-to-eat Walnut Kernels in bags, or as a baking ingredient for home bakers making pastries, bread, and other items.

5. Material (Origin & Raw Material)

Produced in Aksu, Xinjiang, using high-quality varieties such as the 185 paper-shell walnut. Aksu is located in the premium nut-growing belt at 41°N latitude, with ample annual sunshine, large day-night temperature differences, irrigation from Tianshan snowmelt, and sandy loam soil.

Normal Light Color·Half-Kernel uses the dry-cracking method for kernel extraction. Walnuts are fully air-dried before cracking, producing kernels with a natural light yellow colour – the mid-grade between Jianbai and Pubai – with no artificial colouring or treatment, preserving the natural state of the walnuts.

6. Production Process

After walnuts are fully air-dried, they are cracked to extract the kernels. After extraction, colour grading is carried out, with Normal Light Color selected as a separate mid-grade colour. Form grading follows, retaining complete half-kernels, followed by impurity removal. Standardised quality control is applied throughout the process, with strict colour grading, form grading, and impurity removal to ensure consistent colour, complete form, and thorough removal of impurities.
