Product Description

1. Product Characteristics

Amber·Half-Kernel is a dark-coloured grade in walnut kernel classification. Amber colour refers to kernels that display a natural colour ranging from deep yellow to light brown – uniform, deep, with a translucent quality, similar to the warm tone of amber. In commercial grading, this is classified as a dark colour grade.

The amber colour is noticeably deeper, placing it in the dark colour category. This colour develops naturally depending on the walnut variety, maturity, and the degree of natural oxidation during the drying process. It is a natural attribute of certain walnut varieties, with colour intensity showing natural gradation – not the result of artificial colouring or processing. The kernels are plump and complete, with a crisp texture and a mature, rich walnut flavour with a long, full aftertaste. The colour performs strongly in baking applications.

3. Uses

With its deep colour and rich flavour, Amber·Half-Kernel is suited for applications where dark-coloured raw materials are required, offering a differentiated market position from light-coloured walnut kernels.

Dark-Coloured Baked Goods: The colour naturally coordinates with the dough base of rye bread, wholemeal biscuits, and multigrain cakes. Minimal colour difference after baking results in high visual harmony in the finished product. Suitable for rye walnut bread, wholemeal walnut biscuits, and multigrain walnut cakes.

Caramel and Chocolate Products: The amber colour visually complements caramel tones, making it suitable for caramel walnut tarts, toffee walnuts, and chocolate-coated walnuts. The dark kernels provide a warm colour contrast against dark or milk chocolate, creating a unique visual effect.

Traditional Chinese Preserved Fruits: Used in traditional Chinese preserved products such as candied walnuts, sugar-coated walnuts, and honey walnuts. The amber-coloured kernels take on a warm, lustrous appearance after sugar coating, matching the product's positioning.

Cooked and Heat-Processed Foods: Used in walnut rice, walnut porridge, and other foods requiring high-temperature, prolonged cooking. The deep colour of the kernels undergoes minimal change after extended heating, while flavour release is fully achieved.

4. Usage Scenarios

Amber·Half-Kernel is suitable for commercial scenarios where dark-coloured walnut kernels are specifically required.

Specialty Bakeries: Used in the production of rye bread, wholemeal biscuits, and multigrain cakes. The amber-coloured kernels naturally complement dark dough bases, requiring no additional colouring in the finished product – suitable for specialty bakeries focusing on natural ingredients.

Chocolate and Confectionery Workshops: Used in caramel walnuts, toffee, and chocolate-coated nuts. The dark kernels coordinate well with caramel and chocolate tones, adding depth to the product.

Traditional Chinese Food Companies: Used in the production of traditional Chinese preserved products such as candied walnuts and honey walnuts. The amber-coloured kernels take on a warm, lustrous appearance after sugar coating, with a natural look.

Export Trade: Dark-coloured walnut kernels have specific demand in international markets. Amber·Half-Kernel can meet the procurement needs of markets seeking colour differentiation.

5. Material (Origin & Raw Material)

Produced in Aksu, Xinjiang, using specific walnut varieties. Aksu is located in the premium nut-growing belt at 41°N latitude, with ample annual sunshine, large day-night temperature differences, irrigation from Tianshan snowmelt, and sandy loam soil.

The amber colour is a natural characteristic of certain walnut varieties, related to variety traits and the degree of natural oxidation during the drying process. The colour shows natural gradation and falls within an acceptable colour range. This specification uses the dry-cracking method for kernel extraction. Walnuts are fully air-dried before cracking, producing kernels that maintain a complete half-kernel form with a warm, uniform colour.

6. Production Process

After walnuts are fully air-dried, they are cracked to extract the kernels. After extraction, colour grading is carried out, with Amber selected as a separate dark colour grade. Form grading follows, retaining complete half-kernels, followed by impurity removal. Standardised quality control is applied throughout the process, with strict colour grading, form grading, and impurity removal to ensure uniform colour, complete form, and thorough removal of impurities.
