Product Description

1. Product Characteristics

Light Color·Half-Kernel is a walnut kernel product obtained by cracking shelled walnuts and then finely grading by colour and form. Light Color is a colour grade that sits between Light White and Plain White in the walnut kernel colour grading system. It is an upper-mid grade, with a light yellow base colour – slightly deeper than Light White but lighter than Plain White – with good colour uniformity and no obvious colour variation.

The slightly deeper colour of Light Color, with its natural light yellow undertone, makes it better suited for baking and food applications where a natural look is preferred. It has better colour fastness and undergoes more even colour change during baking. The kernels are plump and complete, with a crisp, fragrant taste that retains the natural flavour of Aksu walnuts.

3. Uses

With its natural colour and complete form, Light Color·Half-Kernel is suited for applications where colour fastness and a natural appearance are important, offering a differentiated positioning from Light White·Half-Kernel.

Baking Fillings: The slightly deeper colour makes it more suitable for mooncake fillings, walnut cookie fillings, and bread fillings – baked goods where a darker or more baked colour is preferred. During baking, the colour change is even, blending well with the dough base colour for a harmonious finished appearance.

Chinese Pastries: Used in traditional Chinese pastries such as walnut cakes, walnut cookies, and walnut crisps. The complete kernel form remains visible in the pastry, adding both texture and visual appeal.

Confectionery: Suitable for walnut candy, candied walnuts, and sugar-coated walnuts. The half-kernel form remains visible after sugar coating, adding texture and an artisanal feel to the product.

Dairy and Beverage Ingredients: Can be used in walnut milk and walnut beverages, or as an added ingredient in yogurt and ice cream.

4. Usage Scenarios

Light Color·Half-Kernel is suitable for a variety of scenarios, covering both B2B processing and consumer use, offering differentiation from Light White·Half-Kernel.

Food Processing Companies: Mooncake and pastry factories purchase in bulk for mooncake fillings and pastry production. The slightly deeper colour blends more easily with baked pastry bases, making it suitable for large-scale production.

Confectionery and Snack Companies: Used in candied walnuts, sugar-coated walnuts, and nougat. The half-kernel form remains visible after sugar coating, enhancing product appeal.

Retail and Gift Channels: Can be packaged as ready-to-eat Walnut Kernels in bags or used in gift box products. The natural colour and complete form are suitable for mid-to-upper retail positioning.

Household Consumption: Ready to eat straight from the bag as a daily snack. Also suitable as a baking ingredient for home bakers making pastries, bread, and other items.

5. Material (Origin & Raw Material)

Produced in Aksu, Xinjiang, using high-quality varieties such as the 185 paper-shell walnut. Aksu is located in the premium nut-growing belt at 41°N latitude, with approximately 2,900 hours of annual sunshine, large day-night temperature differences, irrigation from Tianshan snowmelt, and sandy loam soil – conditions that produce plump, flavourful kernels with pure taste.

Light Color·Half-Kernel uses the dry-cracking method for kernel extraction. Walnuts are fully air-dried before cracking, producing kernels with a natural light yellow colour that preserves the walnut's natural colour and aroma. The dry-cracking process involves no additional heating or treatment, keeping the kernels closer to their natural state.

6. Production Process

After walnuts are fully air-dried, they are cracked by machine or manually to extract the kernels. After extraction, colour grading is carried out, with Light Color selected as a separate mid-grade colour. Form grading follows, retaining complete half-kernels.

Standardised quality control is applied throughout the process, with strict colour grading, form grading, and impurity removal. Broken kernels, insect-damaged kernels, mouldy kernels, and other defective kernels are removed to ensure consistent colour and complete form in the finished product. Finished products are inspected and packed into cartons.
